Rooted in his Italian heritage, Chef Verde is dedicated to crafting inventive dishes that celebrate bold flavours, authentic techniques, and seasonal ingredients. Gaetano's Inspiration

“I find inspiration everywhere—from the seasonal produce at local markets to memories of family meals growing up in Italy. My cooking is deeply rooted in tradition, but I also love experimenting and finding new ways to elevate classic dishes. Travel has also played a huge role in shaping my style—working in different countries and kitchens has taught me to respect every ingredient and always cook with heart.”

“TOZI is more than just a restaurant—it’s a feeling,” says Chef Gaetano. “There’s a real sense of community here, from the team in the kitchen to the guests at the table.
